MSC certified Greenlandic Gourmet Prawns.

New product - Good, Old Fashioned Flavour

  (DENMARK, 11/25/2013)

Royal Greenland has recently launched its new Greenlandic Gourmet Prawns; a luxury brined prawn processed using a unique combination of classic handcraft and new technology. The result is a product full of natural, sweet prawn flavour and with a significantly lowered level of salt.

Greenlandic Gourmet prawns have been developed in close cooperation between Royal Greenland's newly renovated prawn processing facility in Ilulissat, Greenland and the company's New Product Development team in Denmark. The goal was to create a premium brine product allowing the high quality and natural flavour of the company's Greenlandic raw material to shine through.

The waters around Greenland are the habitat of some of world's tastiest and unique seafood.

In order to find the right production method in Ilulissat and preserve the natural flavour in the best possible way, former production manager, now pensioner, Knud Mølgaard was brought in to share his knowledge of traditional production methods, more gentle than the ones typically employed today.

The prawns used for Greenlandic Gourmet Prawns are caught in shore close to the west coast of Greenland by small fishing vessels staying at sea for only a couple of days at the time. The fishermen deliver their catch directly to the Royal Greenland factory. For the Gourmet Prawns, an extra sorting is done, compared to normal procedure, where the best and largest prawns are chosen. The prawns are cooked according to size to ensure a juicy end product and peeled gently, often leaving the tails intact and thus preserving as much flavour as possible.

Subsequently, the prawns are frozen in large blocks, which is a more gentle method than IQF freezing, and they are sent to the brining facility.

The prawns are thawed and brined in a very mild brine solution with a salt level of only 1.4%, compared to the industry standard of 2.6%. This allows the natural delicate flavour and sweetness of the prawn to shine through, while still retaining an satisfactory shelf life.
