Alaska Whitefish Buyer’s Guide

The Alaska Seafood Marketing Institute (ASMI) has released a new resource for foodservice professionals to aid in purchasing Alaska whitefish, titled the Alaska Whitefish Buyer’s Guide.
This practical resource contains detailed information on each of the different whitefish varieties in Alaska including: Alaska pollock, surimi seafood, cod, black cod, halibut, sole/flounder, and rockfish. Information on harvesting methods, resource management, processing, product forms, nutrition and seasonal availability are also included.

Alaska is home to some of the largest populations of whitefish varieties in the world, and can be found at QSR (Quick Service Restaurant) to fine dining foodservice establishments. The Alaska Whitefish Buyer’s Guide is free of charge to industry professionals.
The ASMI foodservice program is designed to help commercial and non-commercial operators handle, menu and promote Wild Alaska Seafood. Many educational materials are available including: species identification, storage, handling and quality information, fact sheets and training videos.

Each year new recipe books are developed incorporating the latest food trends. Promotional packages also available include posters, menu sheets, tabletents, waitstaff buttons and tip cards to add value to an Alaska Seafood promotion.
