Gaspé Cured: a Great Tradition of Quality and Authentic Taste

Founded in 1983, Gaspé Cured Consortium regroups four processing plants, amongst them, some of the oldest companies in Canada.

Renowned for pursuing an age old tradition of quality in salt-fish processing, this premium delicacy called "Gaspé Cured Cod" has come to symbolize Gaspé quality and authenticity. Gourmets everywhere appreciate its slightly transparent amber flesh and the delicate flavour with its subtle hint of salt. The dry and windy climate along the Gaspé coast has, for centuries, provided perfect conditions for salting and drying fish outdoors.
 
Following the centuries-old tradition, each piece of codfish is cut by hand, mildly salted, drained of water and then stretched out in wire -mess tables outdoors to soak up the sun.
 
Today, the processing plants have innovated and developed a full range of frozen, fresh, salted, smoked fish and seafood products. The company's team has decades of experience in the seafood industry and strives to provide “five-star” quality in everything they do.

Over its 30 years in business, Gaspé Cured has delivered excellent quality and service. The company has accomplished this by maintaining control over all aspects in purchasing raw materials, handling and processing.
 
Every day, Gaspé fishermen deliver the freshest seafood and fish to the plants, where it is either salted or quick-frozen whole, in fillets, or according to client specifications.

The company's sales offices are located in Quebec City and Montreal, from where the administration and distribution of products from the plants located along the Gaspé Peninsula are handled.

The Consortium's four plants are all located within easy reach of major ports on Canada's Atlantic seaboard and operate under Canadian federal, provincial and international standards.
 
The company exports to the USA, Canada, Carribean, Italy, China, France and Spain, among other countries.
 
About the Gaspé Cured Consortium

Gaspé Cured is an international import/export trade office representing a consortium of fish and seafood processing plants located along the Gaspe Peninsula, Quebec, Canada.

The Gaspé Cured Consortium is formed by four processing plants: Poisson Salé Gaspésien, Lelièvre, Lelièvre et Lemoignan, Les Pêcheries Gaspésiennes and Les Fumoirs Gaspé Cured.
 
When cooked the lobster's shell turns orangy-red, with pinckish white meat. The rocky, cold water in where they grow, with the abundance of plankton for food, accounts for the Atlantic lobster's robust meat of superior unique taste.
 
Poisson Salé Gaspésien
Three families; Nicolas, Dubé and Méthot, from a small coastal village on the Gaspé Peninsula are owners of the Poisson Salé Gaspésien, which was founded in Grande-Rivière in 1974. The Nicolas family has been processing fish for several generations. Salted and dried cod is one of the company’s most valued assets.
 
Poisson Salé Gaspésien Ltd. benefits from an environment that is innovation friendly, while offering an expertise that has been acquired over decades.Since 2009, management at Poisson Salé Gaspésien Ltd. has taken up the challenge of diversifying operations by engaging in lobster processing, while at the same time maintaining its production of other salted, dried and frozen fish. Three years after the launch of the new frozen lobster line, the company managed to triple sales and expand into the USA, Chinese and European markets.
 

 
Lelièvre, Lelièvre et Lemoignan
From fishing villages dotting the coast to the rugged shoreline framed by high cliffs, the scenic Gaspé Peninsula, which juts out on Québec’s most easternmost point at the Gulf of St-Lawrence River, is home to Lelièvre, Lelièvre et Lemoignan, a name synonymous with a tradition of excellence and quality of production under the renowned brand name Gaspé Cured.
 
Founded in 1968, the company specialized originally in the processing of salted and dried codfish, was then bought out by the three sons of the original founders: Roch Lelièvre, Luc Lelièvre and Marc Lemoignan. The three shareholders then joined together with other fishing plants to form Gaspé Cured, following a centuries-old fishing tradition - dating back to 1755 - of experience handed down over the years.
 

 
Les Pêcheries Gaspésiennes
Proud of its past and future-oriented, family-owned Les Pêcheries Gaspésiennes is dedicated to the diversification of its products and training the next generation to maintain its leading position in the industry. At the forefront of technology, Les Pêcheries Gaspésiennes has evolved over time to meet the growing needs of its valued customers by offering a wide range of fish and seafood products.
Gaspé Cured lobster meat is hand-picked and cooked to perfection, ensuring that the meat is always of the highest quality with a firm texture and naturally sweet taste.
 
Les Fumoirs Gaspé Cured
The Gaspé Cured smokehouses, built in 2001, are an example of integrated development. In 1995, two of the Consortium Gaspé Cured plants invested close to 1.5 million dollars in order to start processing herring, with egg extrusion for the Japanese market and herring freezing for bait. Split herring was then sold to New Brunswick smokehouses for smoking.
 
In 2000, Gaspé Cured shareholders, with the help of the Quebec government, invested close to 2 million dollars in the construction of Gaspé Cured smokehouses in order to diversify production in Gaspé and to therefore create local jobs.
