Under Heat and Acid Treatment: Rheological and Calorimetric Analysis
Jumbo squid mantle muscle gels were prepared by using the one-step (90 °C/30 min) and the two-step (30 °C/1 h + 90 °C/30 min) heat treatments (HTs) with and without the addition of d-isoascorbic acid (IAA). Reactive sulfhydryl (-RSH) content, SDS-PAGE protein profiles, gel-forming ability in terms of their texture profile analysis (TPA), folding test (FT), and water holding capacity (WHC) were evaluated on experimental gels.
Additionally, the rheological and calorimetric behaviors of previously prepared sols were monitored. The –RSH content of gels showed no statistical differences (p = 0.05) due to the effect of HT; however, their content was reduced by 18.4% by the addition of IAA.
The TPA showed changes only in cohesiveness (p < 0.05). The FT evaluation indicated that all gels were A–B grade. The WHC of gels increased with the two steps of HT but decreased with the addition of IAA. The rheology and calorimetry of sols remained without major variations.

By focusing on negative saturated fats, FDA misses the point and misleads label readers. Fish, such as salmon, contain almost entirely unsaturated essential omega-3s, the healthiest fatty acids found in any protein. Meanwhile, the planned labeling provides no way to highlight nutritious components of the product, including for fish, the unsaturated fats associated with brain and heart health.
In the case of seafood, this regulation is essentially pointless and can confuse consumers while adding an unneeded compliance burden to American producers who will need to retool their labels for the massive U.S. market.
The incoming Trump Administration should withdraw the proposal in its entirety.

Norwegian aquaculture firms Bue Salmon and Bolaks Group have announced a strategic three year-partnership that will “ensure Bue a stable supply of smolt, while Bolaks receives robust post-smolt in return.”
Bue will receive smolt from Sævareid Fiskeanlegg, in which Bolaks is the majority shareholder; the smolt will then be upgraded to post-smolt at Bue Salmon’s land-based Bulandet site before being returned to Bolaks' sea farming sites.
The collaboration is intended to also include knowledge sharing, as both firms are currently studying optimization of land-based post-smolt production.

Chipotle Mexican Grill has announced minority investments in two pioneering aquaculture companies - CH4 Global and Plantible - through its venture fund, Cultivate Next.
Chipotle, through supporting these companies, aims to contribute to the development of solutions that tackle sustainability challenges in food production and environmental impact.
CH4 Global seeks to reduce the methane emissions associated with cattle farming - a major contributor to climate change. Their product, Methane Tamer, is a feed additive derived from Asparagopsis seaweed.

The Fisheries Ministers of the Twenty-seven gave the green light on December 11, during the last Council of Ministers of 2024, to a 'cut' of 79% in fishing days, reducing from 130 to only 27 days on average those that can be fished from January 1 of this year.
The United States and the European Union are world leaders in fish production and trade, and their respective fisheries management systems differ in several significant aspects. The results are also: without a landing law as strict as the European one, and with less public aid to the sector, US fisheries management is more effective, at least in terms of the percentage of fisheries at overexploitation level.
According to data from the latest FAO SOFIA report, in 2022 the United States managed 506 fish stocks. The country represents 5.3% of the world's fisheries, ranking among the top six world producers. Fishing generates 2 million jobs.

Norwegian salmon farmer Lerøy has estimated that around 15,000 salmon escaped from its Sandholmane site in Aukra municipality site earlier this month, it announced a press release yesterday.
On January 5, during a routine inspection, damage to a net was discovered at the site, and the farm's contingency plan was immediately implemented. The company states that nets were deployed to reduce potential consequences, and a dialogue has been established with relevant authorities and stakeholders, including the Directorate of Fisheries.
