Naturally Sublime Caviar

Thanks to the extraordinary natural conditions of Riofrio, a small village in the Loja mountains, Caviar de Riofrío is the first certified Organic caviar in the world.

The water flows all year round from a natural spring located 300 metres from the pools, at a stable temperature of between 14-15º C.

The sturgeons, which include the variety Acipenser naccarii, Acipenser gueldenstaedtii (Osetra) and Huso huso (Beluga), are farmed in the best waters in Spain and probably the world, at a constant temperature which practically replicates their wild habitat in a natural way.
Riofrío is a small village in Loja, in the province of Granada. This peaceful setting is located in the basin of the Guadalquivir river where the native species Acipenser naccarii – also known as the Adriatic sturgeon or ‘sollo’ – thrived for centuries.Loja is located at a similar latitude to the south of the Caspian Sea and the region of Andalucía is as sunny as key areas of the Middle East. This is why the water does not have to be artificially heated to breed in captivity, as is the case in other European countries.
The company does not use pumps to move water in the Riofrío pools where the sturgeon is raised and cared for. All the movement is produced by the natural flow of the water thanks to the orography of the Rio Frío riverbanks.
The fish farm, established by the pioneer of aquaculture in Spain, Doctor Domezain, enjoys unique conditions that recreate the most natural possible environment for the breeding of sturgeon.
Domezain started to fill the farms with trout, becoming renowned for its famous Ríofrio trout brand. The flavour of the fish, the restaurants on the riverbank, the beauty of the environment and the strategic location began to attract thousands of visitors to this small corner of the Loja mountains.
In the 1980s, the Domezain family began to breed sturgeon in captivity to produce caviar. This re-introduction of sturgeon to Riofrío, very close to the Guadalquivir waters where they had lived in the wild, immediately aroused a lot of scientific interest.
In the 1990s, a great opportunity presented itself: an international decree granted sturgeon with endangered species status, and therefore banned it from being fished.
The sturgeons farmed include the variety Acipenser naccarii, Acipenser gueldenstaedtii (Osetra) and Huso huso (Beluga).
Today, all caviar comes from non-wild fish, therefore its quality and excellence depends solely on the place where it is farmed. Due to the quality of its water, its natural temperatures and hours of sun in the area to the west of Granada, Riofrío Caviar is of a quality that is unique in the world.
When the CITES decree became law, prohibiting the fishing of sturgeon, very few fish farms, hardly any at all, had female sturgeon ready to produce caviar. Riofrío was one of them, thanks to the vision of the Domezains, who had started to work towards this goal years before.
It was also the first fish farm to obtain organic certification, and in the year 2000, Riofrío Caviar became the world's first organic caviar, achieving the first certification for caviar and the breeding of sturgeon.
The purity of the water in the Sierra de Loja, where the fish farm is located, and the exhaustive care that is taken of the sturgeon throughout the whole of its life cycle, ensure a sublime product.
Four biologists currently work at Riofrío and they carefully rear more than one hundred thousand sturgeon. The challenge, which is met year after year, is to create a product of sublime quality that shows the ultimate respect for the environment and the animals' quality of life. To do so, Caviar de Riofrío works using a system free from the use of antibiotics and forced growth feeding, as well as dedicating a third of the surface of the fish farm to maintaining the purity of the water, which is returned clean to the river and is key to the quality of the caviar. This completely natural purification system has a significant effect on the development and health of the characteristic bird life of Riofrío.
