In Russia the culture of clipfish consumption is completely undeveloped

Vitaly Orlov’s fishing holding is lobbying through the Association of Fishing Fleet Shipowners (ASRF) for a proposal to establish a coefficient for cod clipfish (dry and salted) produced under investment quotas.
The Russian Ministry of Agriculture did not include clipfish in the draft government decree, which establishes the production coefficients of fish products for coastal factories, however, this is not surprising.
Firstly, preferences for one Murmansk enterprise working on an export-oriented mono-product puts coastal factories, which work on a wide range of products, in unequal conditions. And, secondly, the type and method of cutting fish in the clipfish production technology is similar to the technology for the production of gutted headless fish (GBG).
According to GOST 32772-2014, klipfish is a product obtained from haddock, pollock or cod, cut into a layer of klipfish cutting. The clipfish cutting layer is a fish cut along the belly from the head to the end of the caudal peduncle, with the head, part of the spine, and entrails (including caviar and milt) removed and the black film, kidneys and blood clots removed (the humerus bones are left). According to GOST 814-2019, PBG is a fish cut along the abdomen between the pectoral fins from the anus to the anus and beyond, with the head and entrails removed (including caviar, milt), and blood clots and kidneys removed.
In Russia the culture of clipfish consumption is completely undeveloped. Actually, even at the construction stage of the plant, RK Polar Sea+ LLC (a subsidiary of Norebo) announced that clipfish was a specific product for hot countries such as Spain, Portugal and Brazil. “There it is called 'bacalao' - this is an ancient and popular product, invented in the absence of freezing fish,” explained Sergei Sennikov, Deputy Director for International Affairs and Public Relations of UK Norebo LLC .
Thus, enterprises in the Northern Fisheries Basin, which lost part of their quotas during the first stage, could use raw materials to produce products with less sonorous names, but in demand among Russians.
