Umami Expands AI Tool Alkemyst into Aquaculture

Umami Bioworks has launched the latest evolution of Alkemyst, an AI tool initially developed to accelerate cell-cultivated seafood production, now expanded to support the broader seafood value chain, including aquaculture.
Alkemyst is trained on a comprehensive dataset comprising public and proprietary marine genomics, metabolomics, and seafood sensory data, alongside a growing proprietary dataset encompassing production process parameters and organoleptic attributes specific to seafood species. Leveraging the shared biology between cellular and whole-animal systems, Alkemyst demonstrates enhanced versatility, enabling a more holistic approach to seafood innovation.
