A farmed salmon that eats much less fish

Who can taste the difference with an 'ordinary' farmed salmon? No one at the moment. The salmon from the farm near the Norwegian island of Kvarøy that chefs Alain Caron and Thomas De Muth serve in the Amsterdam restaurant Gouden Reael tastes at least as good as other salmon. But there is something special about the salmon: the feed of this Kvarøy salmon uses much less wild-caught fish and much more vegetable ingredients.

Bart van Olphen, founder of Fish Tales, met Norwegian salmon breeder Alf Knutsen last January at the Boston Seafood Show, the American counterpart of the Seafood Expo Global. Van Olphen became enthusiastic about the Norwegian's breeding method and his ideas about sustainability, which he puts into practice in the clear, ice-cold water around Kvarøy.

A relatively large amount of wild fish is required for the feed of farmed salmon. Partly for this reason, Van Olphen was never so charmed by farmed fish. “Catching wild fish to feed farmed fish can be extremely inefficient: more fish goes in than comes out. They found the solution at Kvarøy. There they only use 480 grams of wild fish to produce one kilo of farmed salmon. Revolutionary!”, says an enthusiastic Van Olphen. “In addition, Kvarøy Arctic, the official name of the farm, does not use any antibiotics, hormones or chemicals when farming salmon. In addition, this salmon has up to 50 percent more space than the standard. Kvarøy Arctic's nets are copper-free, so that no harmful copper particles end up in the ecosystem."

This salmon was already available in the United States. Fish Tales is now also marketing the Kvarøy brand in Europe. Two weeks ago, the largely vegetarian salmon was presented to the (culinary) press in Amsterdam, at which Caron and Demuth put several preparations on the table and Knutsen was also present thanks to a video connection and was able to answer questions.

The Kvarøy salmon, smoked/packaged for Fish Tales in the Netherlands, is currently available at Albert Heijn and online supermarket Picnic. Adri & Zoon will be distributing it to the retail trade.
