Traditional Japanese noodles are made from a simple mixture of water and flour which are used to form the dough. The dough is then rolled out and cut into strips or formed by hand, and then cooked in boiling water. Noodles have been largely introduced into Western culture in dried packet or pot form.

Historically noodles date back to the first century BC in China but were adopted by the Japanese during the Heian period (794-1185). It was Zen Monks who travelled to China and discovered the art of noodle making. Noodles became popular with workers during the building of the Capital City Edo (now Tokyo) in the seventeenth century. This brought about the rise of street stalls selling bowls of noodles drowned in soup. Later on during the eighteenth century, as hostility rose between the classes, the Aristocracy would eat at Noodle Stalls in silence, while the lower classes would slurp them up as loudly as they could.

Noodles are now widely available in shops, supermarkets and restaurants. They are a popular accompaniment to a wide variety of meals although traditionally eaten with soup, they can be added to a stir-fry for a more contemporary dish. They are low in fats and are a good source of carbohydrates and fibre.

''Yutaka'' have selected the two most popular Japanese noodles, Udon and Yakisoba. The traditional Udon is thicker than Chinese style noodles and very white in colour. The Yakisoba noodle is much thinner and made with eggs which gives it it's distinctive yellow colour. Yakisoba (not to be confused with Soba noodles which are made from Buckwheat) are traditionally fried.
