Jonsson Shrimp Peeling Systems For Faster, Better, Cheaper Shrimp Processing

Since its founding in 1955, Gregor Jonsson Inc. has devoted full time to the shrimp industry. The company’s only business is the design, manufacture and distribution of shrimp peeling and deveining systems.

Today, Jonsson is the world’s only supplier of shrimp peeling systems that can peel any size shrimp, from 10 to 90 count; peel any style – tail-on or tail-off, round, butterfly, western style or EZ peel; peel any kind – all warm water shrimp, wild or pond-raised, fresh or thawed; and peel any quantity – easily and economically expandable as your needs grow.

Regardless of the model that is right for you, Jonsson peeling systems and machines peel shrimp 10 times faster than hand peeling; better, by providing greater uniformity resulting in better looking shrimp; cheaper, Jonsson systems peel more shrimp in less space than other methods, lowering plant costs, saving money; safer by less handling which means less risk of contamination, and faster processing means less time and temperature abuse; and smarter than hand-peeling.

The key to top quality is individual shrimp processing. A Jonsson machine automatically adjusts to each shrimp, gently peeling and deveining it in the style selected.

Jonsson peeling systems consists of 2 different products: the Model 60, and the Model 64. While there are many similarities, the main differences are speed and cutting styles.

How Jonsson’s shrimp processing works?

• A small clamp picks up a shrimp from a plastic tray.
• The shrimp is carried through a centering guide as a large clamp closes with a firm grip on the shell.
• If tail-on processing is selected, the body shell is broken from the tail segment.
• The large clamp carries the shrimp through a patented cutter and guide system that precisely splits the shell.
• A pair of brushes removes the vein.
• A fork enters the shrimp meat, pulling it gently and cleanly from the shell.
• The shell is then discharged at a different location.
• After peeling, visual inspection and minor handwork complete the process.

 About Gregor Jonsson Inc.

The original concept for the Jonsson shrimp peeling system was developed by Gregor Jonsson in 1938. Gregor owned a retail fish market and to maintain the highest quality, he filleted fish himself. As he was peeling shrimp one day, his wife quipped that there should be a machine available that peels shrimp. After a few moments, Gregor responded "It would be easy!" He grabbed a paperclip that held the shrimp, used a pair of scissors to cut the shell, and then pulled the meat out with an ice pick.

Since he was not an engineer, Gregor had no preconceived idea of how such a machine might be built. However, as a fish expert, he was already familiar with shrimp and he knew the machine would have to handle each shrimp carefully to avoid damage. He studied shrimp: the way the shell was formed, the way shrimp are curved, and the normal size variations. He designed his machine around the shrimp itself, using the same concept he illustrated for his wife. In 1953, Gregor Jonsson and Frank Heurich, together, built the first machine in Jonsson's home.

After the first systems were built and tested, the company was formed. Gregor Jonsson Inc. has thrived for over 50 years supplying the world with shrimp peeling systems.

Gregor Jonsson Inc. remains a family owned and operated business, located in a suburb north of Chicago. The engineering staff concentrates on perfecting performance, simplifying maintenance, and bringing new products to market. Parts are made using precision automatic machines, and all assembly operations are preformed on-site to ensure the highest quality possible.
